Sweet Potato Soup (posted 04/14/2020 by Paul T)
Simple and tasty, this rich, decadent soup is perfect on a cool day. Lighten it up by using a plant-based milk or low-fat milk instead of cream.
3 sweet potatoes, peeled and diced
2 cups vegetable stock
4 tablespoons dark brown sugar
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
1 ½ cups cream, milk, soy milk, or almond milk
2 medium carrots, diced (Optional)
Ground sea salt to taste
Cook sweet potatoes in vegetable stock for 2 hours - 3 hours, or until tender. Add the remaining ingredients and simmer until flavors are well blended. Serve.
