Breads

This recipe came from a favorite cookbook, The Vegetarian Epicure. Unlike many cornbreads which can be dry and a bit bland, this is one of the moistest and sweetest I've had. Enjoy!

1 ¼ cups unbleached white flour
¼ cup whole-grain corn meal
4 tablespoons sugar
5 teaspoons baking powder
¾ teaspoon salt
1 egg
1 cup milk
2 tablespoons butter, melted

Preheat oven to 375 degrees.

Sift together all the dry ingredients. Beat the egg with the milk and add it to the flour mixture along with the melted butter. Stir everthing up well.

Spread the batter in a buttered 9" pie dish and bake at 375 degrees for about 30 minutes to 35 minutes, or until it is lightly browned around the edges.

Serve hot with butter.
